Boomerang for Gmail lets you schedule Gmail messages to be sent or responded to at a later point in time. You can also track messages to know whether or not you've heard back from a specific recipient.

Just write a message and schedule it to be sent whenever in the future you'd like, even if you're not online. Boomerang for Gmail is easy to use and integrates quite nicely into Gmail. The only real downside is that the free version only allows you to schedule 10 messages a month. For Gmail users who just need to shoot off a few emails a few times a month, possibly in anticipation of a vacation or some other event that'll keep them away from their computer, Boomerang for Gmail is an easy to use solution.
